Skillet Pineapple Upside Down Cake

For the campfire version, you can use a white or
yellow box cake mix. To learn more about the
care and cleaning of a cast-iron skillet, see the
bottom of this recipe. For homemade goodies:
1/4 cup butter
1 cup firmly packed brown sugar
3/4 cup chopped pecans
20-ounce can of pineapple slices, drained, reserving
5 tablespoons juice
3 eggs, separated
1 cup sugar
1 cup all-purpose flour
1 teaspoon baking powder
1/2 teaspoon salt
maraschino cherries
Preheat oven to 350°F.
Melt the butter in a 9" cast iron skillet. Add
the brown sugar and pecans; stir well to
thoroughly combine, then turn off the heat -
don't cook it. Arrange 8 pineapple slices in a
single layer over the brown sugar mixture (your
9" skillet should accommodate 8 slices without
overlapping). Set the skillet aside.
Combine the flour, baking powder and salt in a
bowl; set aside.
Beat the egg yolks at medium speed until they
are thick and lemon colored. Gradually add the
sugar, continuing to beat. Add the flour mixture
to the yolk mixture, and stir in the reserved
pineapple juice.
Beat the egg whites until stiff peaks form. Fold
the whites into the cake batter. Pour or spoon
the batter evenly over the pineapple slices.
Bake at 350°F for 40 to 45 minutes. Cool the
cake in the skillet for 30 minutes; then invert
it onto a serving plate. Place a maraschino
cherry in the center of each pineapple ring.
For the campfire version, put your skillet on a
low flame and cook slowly until top of cake is
light to medium brown and a toothpick inserted
in the middle comes out clean.

Understanding Your Equine Athlete's
State of Wellness - Part 4
Equine wellness and where you can improve
the overall picture:
BODY: The
BODY components are the mind, teeth,
hoof health, spinal continuity and
muscle tone. While some of these
seem to be obvious, others are often
totally overlooked by humans, but
not the horse. They are very in
tune to their body and even the smallest
component, such as a misaligned
vertebra, will negatively affect their
performance and attitude. If your
horse is good but just not quite right,
give chiropractic and massage a go.
You could be amazed at the difference.
Balance is the key.
MIND:
A peaceful MIND starts with body
comfort, general contentment, lifestyle,
performance expectations and past
experiences. Last month I reviewed
the mind and past experience interplay.
A horse that is pushed to exceed what
his mindset or body can comfortably do
may at some point explode. Often
times the goals of the rider may not be
in line or realistic with what the
particular horse can do. We need
to keep this in our minds as we select a
horse and throughout the training
process. Balance is the key.
EXTERNAL FACTORS: These
are anything that touches the body from
the outside, even you. Rider:
how are you both in the saddle and on
the ground? Saddle fit: even
the best of saddles need to be assessed
periodically. Environment:
sensory input and how it reflects the
natural existence of a horse.
Horses are designed to graze and walk 20
hours a day. For those who are
lucky enough to still be able to do that
they will be more content and compliant.
Many horses do not get that luxury.
We have altered their natural
environment but they are still carrying
the genetic coding of generations before
that roamed and grazed. These
changes can impact their digestion,
dentition, mindset and muscular fitness.
Part of it you can help, the other
aspects are about you being aware.
Balance is the key.
